Call is taco in a bowl if it makes people happy. This is another recipe that does beautifully in a intsrpot or slow cooker. Chuck roasts are a very flavorful cut of beef but needs time to break down fibrous muscle tissue. Working with a pressure cooker or more modern intapot changes this cook time to about an hour .

1. Mix all seasoning in small bowl sprinkle liberally over both sides of beef
2. Heat cook pot to high heat to brown meat.
3. Heat oil in pan to very hot. Brown meat for 3-5 minutes. Flip and brown on other side - then remove to platter
4. Add peppers, pumpkin and green tomatillo salsa to pot and stir.
5. Place meat in sauce and cook until tender. Instapot - 55 minutes. Slower cooker or stove top - 4-6 hours.
6. Make Rice mixture according to package directions, make it about 30 minutes before dinner time
6. When meat is tender, remove from pot and keep warm. Add drained black beans, and yellow squash. Simmer 5-7 minutes or until squash is tender but not over cooked
Meal extension- Chop leftover meat. Add another can (or two) of black beans to leftover broth. Use an immersion blender or blender to puree. Any leftover rice will thicken soup as well. Warm soup add beef, service with corn chips for delicious black bean soup
The secret ingredient in this dish is pumpkin. A wonderfully nutritious member of the gourd family. Pumpkin puree can be used in almost any recipe that call for tomato sauce or paste. It melts into the sauce and no one will suspect they are eating pumpkin that's not in a pie! Cooked pumpkin freezes beautifully and can be frozen.
