Dice cooked chicken into small peices. In large pot add 2 tablespoons of oil and saute' green and red bell peppers for 2-3 minutes or until simi tender; add jalapenos and satue' additional 2 or 3 minutes; add spinach and parsley continue to saute' 2 minutes. Over meduim low heat add seasonings, chicken and cheeses until hot and cheeses are melted.
Heat oil to 350? in fryer. Microwave tortillas a few at a time 10 seconds. Put 2-3 spoonfuls of filling in warm tortilla fold in sides and roll; secure with toothpicks. Deep fry until golden brown on both sides. Drain. Cool. Cut in half with a slight angle.
