Cook quinoa according to package and set aside.
Sauté oil, garlic, carrot, peppers, green beans, and celery for 5-10 min. Mix in black beans, rotel tomatoes, cilantro, green onions, and salt and pepper to taste. Let simmer covered for 5 min.
Mix quinoa in pan with veggies and allow favors to blend.
Serve and enjoy!
This makes great leftovers warm or straight from the fridge.
