This is meatloaf with some kick! Both tender and moist, this zesty meatloaf is packed with Tex-Mex flavor, and it's delicious served with salsa.
Preheat oven to 350 degrees F. Place a large skillet over medium heat, add oil, green pepper, jalapeno peppers, onion, garlic, oregano, cumin, salt and pepper. Cook 5 minutes or until soft, stirring often. Let cool.
In a bowl, beat egg and mustard. Stir in vegetable mixture, bread crumbs and beef. Gently mix until evenly combined.
Press mixture lightly into loaf pan. Bake for 1 hour or until meat thermometer registers 170 degrees F. Let stand for 10 to 15 minutes. Drain pan juices; turn out onto a plate, and cut into thick slices.
* Note: You can substitute a mixture of 3/4 pound ground beef and 3/4 pound ground pork, or your favorite combination of ground meats, e.g., beef, veal, pork, sausage.
Do not substitute dried bread crumbs or they could make your meatloaf rubbery.
Handle the meat gently; being careful not to overmix, it should be thoroughly combined but not pastelike.
