A cross between chili and tortilla soup. GF and low carb
In an InstaPot, sautee the diced onions & minced garlic until golden. Turn off sautee.
Add all other ingredients--EXCEPT corn and zucchini (liquids, chicken, beans & spices) to the InstaPot and set to Meat Stew.
After cooking, pull out chicken breasts & shred - place shredded chicken back in pot. Add corn and zucchini top chili while in "Warm" setting & allow to come to temperature before serving.
Add additional salt to taste.
