Black Beans & Veggies
1. Make the lime vinaigrette by whisking together the lime juice, cilantro, salt, pepper, and hot sauce (if using). Slowly add
the olive oil, whisking until the dressing thickens.
2. Pour the dressing into the Mason jar.
3. Layer in the black beans, tomato, bell peppers, avocado, and corn.
4. Finish with the salad greens and, finally, the Cheddar cheese.
5. Seal and refrigerate until ready to use. 6. Pour into bowl to serve. TIPS: Avocados will last about 3 days in a Mason jar, but it will depend on the avocado's freshness. I don't recommend using super ripe avocados if you aren't planning on eating the salad the next day.
