WHISKEY BUTTER (prepared in advance)
Combine butter, shallots, parsley, mustard, Worcestershire, whiskey, salt, coriander, and pepper. Mix thoroughly. Drop butter in spoonfuls onto waxed paper. Roll in wax paper and plastic wrap to form a cylindrical log. Refrigerate till hard, about 3 hours. Store in refrigerator for about a week, or freeze for several months.
STEAKS & RUB
Warm steaks to room temperature, about 20 minutes. .
For the rub, combine chile powders, paprika, peppers and sugar. Bring grill to medium heat (about 300°f). Remove extra moisture from meat with paper towel. just prior to grilling, brush steaks with oil. Sprinkle about 1 tbsp. of rub and a little salt on steaks. Pat in with fingers.
Grill first side for 5 minutes. Turn and grill for 5 more minutes for medium-rare preparation (best flavor). Remove from grill and let rest for 5 minutes.
Top steaks with a pat of whiskey butter, cut each steak in half to serve on heated plates.
Don't overcook the steak.
