Suggest a better description1. Brown soyrizo over medium-high heat in a non-stick skillet. Lower heat to medium-low and push browned soyrizo aside.
2. Scramble eggs on other side until almost set. Stir together eggs and soyrizo, push mixture aside.
3. Sprinkle cheese over bottom of pan, then set soyrizo and eggs on top of the layer of cheese. Turn heat to medium-high for 1-2 minutes, until cheese begins to brown, then remove from heat.
4. Spoon onto tortillas & serve.
