Meanwhile, heat skillet on medium high. Add olive oil. Add soyrizo and saute until heated through and slightly crispy at parts add tofu and crumble with soyrizo.
To serve, place a slice of sweet potato on plate, top with ¼ of the soyrizo, top with ½ avocado. Sprinkle with salt. Enjoy!
