in stock pot, cook bacon till crisp. remove
add onions, cook till soft and translucent (8 min)
add garlic, crushed red pepper, cook stirring 1 min.
add tomato paste, cook till brwn (2 min)
add diced and crushed tomatoes. Season w/ basil, oregano, salt, black pepper. bring to simmer while stirring occasionally.
in sm bowl, soak bread in evap milk. when all is absorbed, use fork to mash into a paste.
place bread and remaining ingredients except spaghetti in lg mixing bowl. Mix till combined.
Form meatballs by rolling into 2 Tbls balls. place on plate as they are formed. ( moist hands makes it easier)
place balls 1 at a time in simmering sauce. allow sauce to return to simmer. and cook w/ pot partially covered.
leave undisturbed for 25 min before stirring. stir gently.
simmer covered for additional hour. stir occasionally.
serve over spaghetti.
