Spaghetti Bolognese with extra vegetables.
Start by preparing all the vegetables and leave to one side ready for adding to meat sauce later.
Heat a large pot on the the hob and add a table spoon of olive oil. Once heated add the onion and garlic and stir well for 1 minute. now add the minced beef to the onion and garlic and stir until beef has browned.
Stir in the rest of the vegetables to your Bolognese sauce and season well to tast. Mix well and leave to simmer on a low heat for 30 minutes, remembering to add the Pasta to boiling water as per time on pack.
And serve. Simple but I love the extra taste that comes from the extra vegetables.
