Grate parasan and pecorino (optional) 10 seconds speed 9, remove and put aside in a small bowl.
Chop shallots 3 sec speed 6, scrape down.
Add Bacon, Olive Oil, saute 5 min / Varoma / Speed 1. Transfer to a large bowl.
Put eggs, egg yolk, reserved cheese into bowl, add 1/4 teaspoon salt and pepper, mix 15 sec speed 4. Pour this egg mixture into the big bowl with the bacon.
Put water and 1/2 teaspoon salt in bowl, cook 8 min / 100 degrees/ speed 1 (brings it to the boil).
Place spagettin through hole in the lid, cook for time required on packet / 100 degrees / speed 1 / reverse.
Meanwhile warm the egg mixture gently (or it will scramble) .
Drain the pasta and mix with the egg mixture - this will cook the egg. It needs to be a bit warm to start or it will not cook properly.
It was fun to make in the Thermomix, but not the best Carbonara I have had. In particular, if you scale down the receipe it's difficult to get enough heat into the egg mix to make it set properly.
