Snij pompoen in de lengte in 2 verwijder de pitten. Bestrijk binnenkant met 2 eetl. olie, kruid met peper en zout. Schik de pompoen met de snijkant naar boven op een bakplaat en zet 20-30 minuten in de oven.
Kook de bulgur gaar
Stoof uien en look glazig. Voeg de champignons toe en bak goudbruin. Kruid met peper en zout en meng de spinazie, de oregano, de salie et de rozemarijn onder. Meng ook de feta onder.
Haal de pompoen uit de oven en schraap het vruchtvlees er met een vork uit
Meng de bulgur en de champignons onder de pompoenslierten en vu er de pompoen mee. Zet nog 5 min in de oven.
