Heat olive oil in large skillet over medium heat. Add onion and garlic powder. Cook and stir until onion is translucent (about 5 min). Add tomatoes, sugar, basil, parsley and salt. Bring to boil. Reduce heat and simmer stirring occasionally until sauce thickens (1-2 hrs).
For smooth sauce cool slightly and process in blender (or use immersion blender) to desired consistency.
Note: Did not thicken properly but did not peel tomatoes.
Also substituted 2 tablespoons if Italian spice in place of basil and parsley.
