Saute onions and peppers in olive oil in bottom of pot
Add italian seasoning, salt and pepper
Add mushrooms to sauté
Add black olives and mix together (do not need to be sautéed)
Reduce heat to light simmer
Add bay leaves
Smush whole tomatoes into pot, removing cores as you go (Do not add all juice from bottom of cans, only a little bit)
Add tomato sauce until consistency
Add sugar to taste
Add fresh basil to taste
Cook on a simmer until serving
Best to make in the morning, and let cook all day.
