Roll Italian Sausage into tablespoon-sized balls. Microwave or bake until fully cooked. Drain.
Sauté onion & garlic until onion is soft. Discard garlic.
Add carrot, green pepper, bay leaf, and herbs. Stir well.
Add tomatoes, tomato paste, seasonings, and sausage if using. Simmer for at least half an hour. Remove the bay leaf. (The longer this cooks, the better it tastes.)
