-sauté scallions in 1/2 stick of butter and olive oil.
-defrost spinach and drain all liquid. Use a ricer for best results,
-add spinach, dill, parsley salt and pepper to scallions. Add additional butter and oil and make sure all mixture is well blended and moist.
-remove spinach mixture and cool.
-in separate bowl add ricotta, grated cheese and feta cheese and mix well.
-add cooled spinach mixture. Blend well
- taste for salt.
-layer approx.10 -15 sheets of filo to pan, butter each individually.
-add spinach mixture.
-repeat filo layering for top.
-chill and then cut with a sharp knife.
- bake 350-375 for 45 minutes ton1 hr. Until golden brown.
Be careful with salt since grated cheese and feta are salty.
