Preheat the oven to 200C
Lightly spray oil over a large non-stick frying pan. Heat the oil, then add the capsicum and onion. Cook over medium to low heat for 5 minutes, then add to the ramekin, followed by the
sugo, tomato and olives.
Crack two eggs into ramekin, top with a sprinkle of paprika and freshly ground black pepper, and bake for 10 – 12 minutes or until the eggs have set.
Garnish with chopped parsley
