Medium saucepan over med low, combine
scallions whites
garlic and 3 tablespoons of oil
cook stirring occasionally until beginning to color, 8-10 min.
Add both paprikas and cook, sir until fragrant and darkened, 30 seconds.
Add 1 cup bread crumbs and stir well. Whisk in broth and increase heat to medium high and bring to a simmer. Reduce heat to medium low an simmer stir occasionally for 15 minutes.whisk vigorously to ensure bread is thoroughly broken up.
Meanwhile, in 12 inch skillet over medium heat combine the remaining 3 tbs. oil, remaining 3 cups bread, scallion greens, 1/2 teaspoon each salt and pepper. Cook stir, occasionally, til brown and crisp, 8-10 min.
In medium bowl whisk egg yolks . Slowly whisk in 1 cup of hot broth, remove soup from heat. Off heat, vigorously whisk the egg yolks into soup. Then whisk in the vinegar. Taste and season with salt and pepper, serve with croutons on bottom, pour soup on top , drizzle with oil if wanted.
