This is an excellent "one-skillet" dinner. Ok, it''s acutally 2 but in the end it''s all back into "one-skillet". Who''s counting anyways??
Prepare rice per box instructions, replace diced tomatoes with tomato sauce. While rice is cooking, brown beef with cumin, red pepper flakes, onion and bell pepper. Once beef is cooked, add corn and olives. Add meat mixture to cooked rice, toss and serve.
Delicious with warm flour tortillas!
