Easier version, using Lékue.
Chop the potatoes in dices or slices, as you prefer
Chop the onions in dices
Slice the gralic
Place the potatoes in the Lékue, with 1/2 expresso cup of water, salt and olive oil and cook them in the microwave for 6 minutes.
In a pan with a tbs of heated olive oil, fry until golden the onion and the garlic.
Then add the microwaved steamed potatoes into the pan, stir for a couple of minutes and add the egg.
Move the contents with a wooden fork and make sure nearly no runny egg can be seen at the top, then turn the omelette using a big flat lid. Cook for a few more minutes.
The garlic and the onion gives a very special flavour to the omelette, however care needs to be taken when frying the garlic since it cooks and burns quickly! The onion is tastier if quite golden.
