Suggest a better descriptionPut 1 tbl olive oil in skillet, add onion and green pepper and saute until tender about 5 minutes.
In measuring cup drain liquid from tomatoes, add enough water to make 1 3/4 cups liquid. Chop tomatoes. To onion mix add liquid, tomatoes and tomato sauce, sugar, salt; heat to boiling. Remove from heat and stir in rice. Pour in oven proof casserole. Microwave on rice setting until done. Add cheddar and place in 350 degree oven until melted.
