Place Turkey in cup to form the crust.
Lay down pepper jack cheese in the bottom of the turkey cups.
Mix the eggs, salad, chopped green onion and cilanto, shredded pepper jack cheese.
Pour the egg mixture in the turkey cups and place in 375 degree oven for 20 minutes.
