1) Squeeze lemons for juice - 2 cups. Peel a 1" strip of lemon skin (no white).
2) Place zest, water, and sugar in a medium saucepan and bring to a boil; stir continuously until sugar dissolves. Remove from heat and allow to cool 30 minutes.
3) Stir lemon juice with strawberry syrup into a large pitcher; add club soda. Serve over ice.
