Make the dough:
1. Warm milk in a saucepan over medium-low heat or in the microwave to 110 degrees Fahrenheit or until the milk just feels warm to the touch. Milk should not simmer or boil.
2. Dissolve the yeast plus ½ teaspoon granulated sugar in the warm milk. Let the mixture sit for 5 to 10 minutes until slightly foamy.
3. Combine the remaining ¼ cup sugar, plus the flour, and salt in a large mixing bowl or in the bowl of a stand mixer with a dough hook attached. Add in the milk and eggs and mix until the dough begins to come together about 2 to 3 minutes. Pause to scrape the sides of the mixing bowl, if needed.
4. Add the softened butter and continue mixing until the dough pulls together into a smooth, shiny ball. This should take about 5 to 10 minutes. If the dough is sticking to the bowl, add an additional 1 tablespoon of flour at a time until the dough pulls together into a smooth ball.
5. Transfer the dough to an oiled bowl. Cover with plastic wrap and refrigerate 4 to 8 hours, or overnight. When you’re ready to bake the babka, remove the dough from the refrigerator 30 minutes ahead of time to make it easier to work with.
Make the filling:
6. Heat butter and cream in a saucepan set over medium heat. When the butter is melted and the mixture is warm, reduce the heat to medium-low and add the chopped chocolate, sugar, and cocoa powder. Stir frequently until the chocolate is melted. Remove from the heat and stir in the cinnamon, ginger, nutmeg, salt, and cayenne pepper, if using.
7. Set the filling aside at room temperature for 30 minutes to 1 hour until it thickens and becomes a spreadable consistency.
Assemble and bake the babka:
8. Butter a 9x5 loaf pan and line it with parchment paper. Set aside.
9. Flour a work surface. Turn out the dough and roll into a rectangle approximately 16 x 12 inches. Use an offset spatula to spread the chocolate filling on the dough.
10. Starting at a short end of the dough, roll tightly. Slice the rolled dough in half lengthwise so you can see the chocolate filling. Arrange the dough halves so the chocolate filling is facing up. Twist the dough halves together, similar to a braid, and pinch the ends together.
11. Transfer the dough into the prepared loaf pan. Cover loosely with a kitchen towel and let it rise at room temperature for 1 ½ to 2 hours or until the dough has puffed.
12. Preheat the oven to 350 degrees Fahrenheit. Bake the babka for 30 to 35 minutes or until the top is golden brown and a toothpick inserted in the middle comes out clean. Let the babka cool in the pan for 15 minutes, then remove from the pan and finish cooling on a wire rack.
To save time, you can also make this babka with store-bought dough. Omit the dough ingredients from the recipe and replace them with 1-pound of premade pizza dough.
Prepare the filling as directed. When you’re ready to bake the babka, flour a work surface and roll out the pizza dough into a rectangle approximately 16 x 12 inches. Spread the filling on the dough and then roll, cut, and shape the babka as noted above. Follow the same proofing and baking instructions as above.
