Suggest a better descriptionHeat the oil in a pan, add the celeriac and onion and cook for 7-8 minutes, until slightly softened.
Stir in the garlic, ginger and curry paste and cook for 2 minutes.
Stir in the lentils and coconut milk, then pour in 450ml of boiling water. Stir well, bring to the boil and then cover and reduce to a simmer for 20-25 minutes. Check from time to time if more water is needed, as the lentils will absorb quite a lot.
Stir in the kale, lemon juice and cashews, and season to taste. Serve half over two bowls and enjoy!
