Suggest a better descriptionPreheat the oven to 220 C, 425 F, Gas Mark 7. Cook the parsnips in boiling water for 2 minutes then drain and toss them in the melted butter. Mix together the soft brown sugar, cinnamon and grated lemon zest. Roll the buttered parsnips in the sugar mixture and bake in the oven for 20 minutes. NOTES : A delicious alternative to roast parsnips.
