heat the oil in a saucepan and soften the onion in it for abt 3 min
then stir in the spices, bay leaf + salt and allow 1-2 min while the heat draws out their fragance
Next stir in the rice, and when its well coated w/ oil + spices, pour in the boiling water
stir once, put on a tight fitting lid, and simmer gently for 15 min or until rice is tender
cover with a towel for 5 min then fluff , remove cinammon stick bay leaf and cardamom and serve
