Good for Christmas cookies
In the bowl of a stand mixer, mix together butter and sugar until just combined. Mix in the vanilla.
Mix together flour, salt, and spices. With the stand mixer on low, add the flour mixture to the butter mixture, mixing until a dough starts to form.
Roll dough into 2 8-inch logs and freeze.
Baking the cookies: Preheat oven to 375. Unwrap the dough and cut into a1/2" rounds. Bake 15-18 minutes until the edges begin to brown.
