2. With kitchen shears, cut the pitas into wedges about the size of tortilla chips. Arrange them in a single layer on a large rimmed baking sheet.
3. With a pastry brush, spread the oil on the pita wedges and sprinkle them generously with the garlic powder, ground cumin, paprika, and salt.
4. Bake for 7 to 9 minutes, or until golden. Remove from the oven and let cool. The chips will firm up after about 5 to 10 minutes of cooling.
