Cut chicken breast in half/filet so that you have 6 thin breast. Mix together mustard, brown sugar, oil and spices and marinate chicken for at least 30 minutes to an hour. Meanwhile cook your onions in a little oil or butter on low heat until they turn the texture/color you want. Adding the sugar helps the caramelization process. Remove onions and cook chicken on medium heat for about 30/40 minutes in same skillet. You'll want to use a good nonstick or cast iron.
