This is a spicey, hardy meal. Great for a cool fall day. If your not into spicey, you can substitute Sweet Italian for Hot
Add one tablespoon of olive oil to a warm dutch oven
Add sausage, brown, and crumble while cooking
Remove sausage from pan with a slotted spoon and drain on paper towels
Over medium heat, add 1 tablespoon of olive oil and the chopped carrot to pan drippings and saute for 5 minutes
Reduce heat to medium/low and add the celery, onion, pepper
and garlic; cook for 3 minutes than add red wine and salt and pepper. Cook until veggies are just tender
Add beans, chicken stock, sausage, parsley, and one can of water to pot
Bring to a boil,cover, and reduce heat to medium;simmer for 20 minutes, stirring often
Remove lid and add tomatoes; simmer 5 minutes more
Ladle into bowls and top with finely grated cheese
