Great egg recipe. Very rich but great for a brunch or as a main dish.
Beat the eggs well. Mix the flour, baking powder, and salt into the melted butter then add to the eggs. Stir in the green chilies. Add the cheese and mix well. Spray pyrex baking dish with Pam cooking spray. Pour egg mixture into dish and bake in a 350? oven until the center is firm approximately 40 to 50 minutes. Serve with dill cheese sauce.
Dill Cheese Sauce
2 Tablespoons butter
1 Tablespoon flour
1 and one quarter Cups milk
One quarter cup shredded sharp cheddar cheese
?One quarter teaspoon salt
One half teaspoon dried dill weed
Melt butter in saucepan then blend in the flour. Gradually add the milk. Cook until thick, stirring constantly. Remove from heat then stir in cheddar cheese, salt and dill. This makes a generous amount, could definitely cut the recipe in half for the sauce.
