Cook the bean burger in the oven and allow to cool right down. Prepare the tomato and pepper by chopping into small pieces (you don't want them too big or they'll poke through the wrap!). Chop up the handful of raw cashew nuts.
Putting it together:
Spoon the humous into the centre of the wrap - right in the middle. Lay the lambs lettuce on top, then the chopped pepper and tomato. Tear up the bean burger and spread over the top of it all.
Sprinkle the chopped cashews over, or along one side.
Now drizzle the sweet chilli sauce over as you want. Then the same with the chilli sauce for extra heat!
Fold in the wrap from left and right, then roll away from you and tuck it in underneath, creating the burrito!
Wrap tightly in cling film or foil and put it in the fridge, it'll form into a tight, spicy, vibrant and healthy burrito that'll fill you up til teatime.
