Tender slices of beef tossed in a sweet and spicy Korean-inspired sauce paired with smokey charred bok choy is a delicious way to make takeout at home!
1. In a medium bowl, mix all of the ingredients for the marinade. Reserve ¼ cup and set aside.
2. Add in the steak slices* and massage to coat in the marinade. Let rest for at least 30 minutes. (You can also marinate the steak overnight. Cover the bowl with plastic wrap and place in the refrigerator. Remove from the fridge 30 minutes before cooking to return to room temperature.)
3. Heat a large non-stick skillet over medium-high heat. Drizzle the bok choy with olive oil, pepper, and salt and place in the skillet cut-side down for 4 minutes, or until charred. Flip the boy choy over and add ¼ cup of water to the pan. Cook for another 4 minutes, or until the water evaporates, and remove from the pan. Drizzle with reserved marinade and set aside.
4. Remove the marinated steak from the bowl and place it on a plate, making sure to allow excess marinade to drip off into the bowl. Turn the heat to high for 1-2 minutes. Add the steak and cook for 2-3 minutes on each side, or until the steak pieces or lightly charred.
5. Serve over rice with the boy choy and sprinkle with green onions and sesame seeds. Enjoy!
*For easier meat slicing during prep, place your steak in the freezer for 30 minutes before cutting.
