Whisk broth, sherry, soy sauce, chili sauce, and cornstarch; set aside
Heat large skillet over med-high heat until drop of water sizzles. Add 2 tsp oil and swirl to coat pan. Add chicken and cook until chicken is cooked through. Remove to plate.
Add remaining 2 tsp oil. Add veg and stir fry until vegs are crisp-tender, 3-5 minutes. Add garlic and stir fry until fragrant, 30 seconds.
Add chicken and cornstarch mixture. Cook, stirring constantly until it boils and thickens, about 1 minute. Stir in cilantro and serve.
