Delicious Chicken Chili from Mary Spaulding - tastes better the next day!
In a 6- to 8-quart saucepan over medium heat, warm the oil and swirl to coat the bottom of the pan. Add the onion and the garlic and cook, stirring occasionally, until softened, about 7 minutes. Add the chicken and cook, stirring constantly, until cooked through and no pinkness remains, about 7 minutes. Add the chili powder, cumin, oregano, and salt and stir to coat the chicken with the spices. Add the jalapeƱo chiles, tomatoes with their juice and broth, stir well, cover and simmer for 15 minutes. Add the pinto beans, black beans, and pepper and cook, uncovered, until the mixture has thickened and the flavors have blended, about 15 minutes longer.
Remove from the hear and stir in the cilantro. Serve in a warmed tureen or individual bowls.
