1. Combine all seasoning ingredients in a small bowl.
2. Prepare all salad ingredients and onion.
3. heat oil in fry pan over high heat: cook onion, stirring until softened. Add chicken to pan: cook stirring until browned. Add prepared seasoning mix to pan: cook stirring, until fragrant.
4. Add half the taco sauce and the water: cook over medium heat, stirring occasionally until the mixture thickens, season to taste, remove from heat. (additional water may be required) Meanwhile heat tortillas in the microwave for 20 seconds. (Between paper towel)
5. Divide chicken mixture into tortillas: top with lettuce, tomato, cheese, sour cream and remaining taco sauce.
6. Garnish with coriander and lime slices.
7. Plate using current styling trends.
