1. Sear scallops for 2-4 minutes per side.
2. For sauce, add oil, onion, carrot and ginger and saute till onion begins to soften (about 3-4 minutes). Stir in curry paste.
3. Add the coconut milk and simmer about 2 minutes.
4. Add herbs and lime juice. Reduce to low and return scallops.
5. Gently roll in sauce to coat and warm them.
