Suggest a better descriptionSift the dry ingredients into a bowl. Add the residue from the sifter. Make a well in the centre of the dry ingredients. Beat the egg yolk and milk together, and pour into the well. Add the corn. Stir until the ingredients are just combined. Beat the egg white until soft peaks form when the beater is removed. Fold the egg white into the corn mixture. Heat the butter in a frying pan. Place tablespoons of the mixture into the pan. Cook over a medium heat until small bubbles appear on the surface and the underside is golden brown. Turn and cook until the second side is golden brown. Serve the fritters with grilled bacon and sour cream.
