spicy noodles with edamame

Pre heat oven 200 degrees C
Partially peel eggplant, leaving a striped pattern. Cut into 2 cm cubes. Drizzle over the olive oil, season with S&P. Roast for 20-25 mins until tender.
In a large pot of salted boiling water, cook soba noodles for 3 mins. stir constantly to prevent sticking, drain and refresh under cold running water.
Heat the sunflower oil in a frying pan over high heat. Add garlic, ginger chilli, stir fry for 1 minute. Add edamame beans, stir for 1 minute. Finally add the soy sauce, vegetarian oyster sauce and sesame oil, cook another minute, until sauce thickens.
Combine the edamame with the eggplant and soba noodles. Toss gently. Sprinkle with sesame seeds to serve.
