This soup will leave you with all those classic Italian flavors and make you wish you were vacationing on the Tuscon countryside with a nice red in your hand! But hey, at least you can still have the soup and definitely the wine! Not to mention this recipe is about as easy as they come!
1) Saute ground beef mixed with all spices over medium heat until completely cooked, 8-12 minutes.
2) Remove ground beef into a strainer and allow for extra fat and grease to drip out during next steps.
3) Add olive oil to the same pan the beef was cooked in, add onions and garlic. Saute until onions become transparent.
4) De-glaze pan using both red and white wines. allot to simmer for 1 minute to ensure all the alcohol cooks out of the wine.
5) Add tomatoes, let simmer for 2 minutes.
6) Reintroduce the beef into the pan
7) Add beef stock and water
8) Let cook on low for 1 hour to allow flavors to fully develop.
9)Boil desired style pasta (I suggest mini farfalle) 10-12 minutes until well cooked and drain. Never rinse pasta after it has been cooked! Fully cooked pasta will provide a better texture for soup as oppose to al dente .
10) Place desired portion of noodles into bowl and ladle in soup to fill the bowl!
This soup will store will in the refrigerator for up to one week. This soup will also freeze well and then simply thaw and boil up some fresh pasta when you need a quick meal!
