Peppers, onions, and sausage fried in skillet with a cajun sauce.
Over medium heat, sauté mini peppers, onion, garlic, butter, black pepper, sea salt, chili powder, Cajun seasoning, and sliced sausage. Cook rice according to instructions and add the chives and minced onion. When onions, peppers and sausage are done add the cooked rice and water. Cook over medium heat for about a minute until rice is coated and desired thickness is achieved. Simmer and serve hot.
Do not over cook onions or peppers. The dish will end up mushy. Long grain rice vs. minute rice is better.
