Make the Pie Crust:
Add all dry ingredients to food processor and pulse to mix. Add half of the chilled butter and pulse 8 times, add the remaining butter and pulse another 6-8 times until it's the consistency of sand. Add the water 1 tablespoon at a time pulsing once or twice, stop adding water when pinching the dough holds together. Turn out onto parchment paper and push together to form a disk. Wrap in plastic wrap and refrigerate at lease 30 min. Save parchment paper to help with the rolling out and to bake on.
Make Filling:
Preheat oven to 350.
Mix the plums, sugar, both jams, vanilla, and spices in a bowel. Let set for at least 30 min.
Drain off and reserve the liquid from the filling. Toss plums in flour.
Roll out the crust to approximately 14 inches and pile the plum mixture into the center of the dough leaving 3 inches of room to the edges. Fold the edges up to make walls.
Beat the egg and thin out with some port and wash the exterior of the shell and dust with sugar.
Bake Pie:
Bake for 45 min.
When Pie is finished baking, boil down the reserved liquid to make a syrup, and pour into the pie.
Roll dough between 2 sheets or parchment and assemble the pie on the lower one to help move this fragile pie.
