Great picnic roll or lunchtime roll to share
Preheat oven to 200c put chicken garlic and lemon slices onto roasting tray, season with salt and pepper drizzle with olive oil, roast for 20 minutes. Add the bacon. And return the tray to oven for a further 20 minutes. Remove from oven and allow to cool enough to handle. To make the dressing mix spring onions,chilled,olives, and oil with the lemon zest and juice, add some seasoning and set aside. To assemble the sandwich, discard the lemon slices, break up the chicken or shred it, break up the bacon. Squeeze the garlic into the dressing, stir well, then spread over the ciabatta slices, fill the sandwich with the chicken, rocket, bacon and wrap tightly in greaseproof paper & refrigerate for a couple of hours allowing the dressing to soak through the bread then slice and serve on platter
