An excellent subsitute for hashbrowns or french fries, these spicy roasted potatoes are a quick, easy side dish.
Preheat oven to 350.
Wash the potatoes and cut into 1 inch pieces. Place in mixing bowl with olive oil, cayenne pepper, garlic, and salt and pepper to taste. Toss in bowl until all pieces of potato are coated.
Pour potatoes into a baking dish. Overlap is okay. Bake until potatoes are tender, 30-45 minutes. Stir/toss potatoes once while cooking.
