Chalupas are a specialty of south-central Mexico. They're in between tostadas and tacos and mostly used as appetizers but can easily be served as main dish. Crowd-pleasers for sure!
• Preheat oven to 200 degrees.
• Heat oil in a skillet over medium heat until hot but not smoking, then briefly cook tortillas, 1 at a time, until softened and hot but still soft, about 10 seconds per side. Transfer tortillas to paper towels to drain, then transfer tortillas to a large baking pan, cover with foil and place in oven to keep warm.
• Heat Mexico City sauce on the microwave for 45 seconds. Spread each tortilla with about 1 teaspoon of Mexico City Sauce, then top with a few shreds of chicken. Add half a teaspoon of cream, sprinkle with onion and cheese. Serve immediately. Provecho!
