Cook sausage in a nonstick skillet, breaking it up as it cooks, about eight minutes. Stir in spiced seasoning mix, water chestnuts, almond and soy sauce, heat for one minute. To eat, spoon half cup sausage mixture onto a lettuce leaf. Wrap envelope style and enjoy. Yields 2 wraps per serving.
