Tomato and pepper sauce
Heat the oil in a saucepan. Add the onion and bell pepper and gently saute until softened. Add the garlic and vinegar and cook for a few more seconds. Add the tomatoes, coriander, parsley, and chili sauce. Simmer uncovered for a further 15 minutes. Serve warm or cover and chill in the fridge.
