Delicious non meat dish. Can be served hot as an appetiser or cold with salad as a main meal.
Melt butter.
Fry sweet potato and spring onion over medium heat until browned and softened.
Add spinach and continue cooking until spinach is wilted and liquid evaporated.
Combine beaten eggs, cheese, salt and pepper in small bowl. Pour over other ingredients making sure vegetables are covered with egg mixture. Continue cooking over low heat. Preheat grill. When mixture has started to cook, transfer to grill and cook for about 5 minutes to brown top.
